From a young age, we were taught about spices; we learned about  Curry and Jerk, we learned about the different types of spices that make out food and drinks delicious. Pimento is a vital ingredient in any Caribbean cooking, or at least that’s what I was told.

Depending on the type of Pimento you have, you may ground it into Allspice or Black pepper if you wish. It has it’s own flavour so be careful when you first use it to cook.

Its unique flavour, works well in stews, drinks and even rice. If you are wondering where you can find this great ingredient, look no further that your own grocery store. It may not be labeled as pimento but peppercorn or black pepper whole. Be sure to pick some up on your next visit.

Before I go, when using pimento start off small and then go for more flavour. As little as 4 pimentos to a pot of rice can change the flavour and make a simple dish even more delicious.
